Our food is fresh, flavorful and innovative. We take traditional ingredients, spices and cooking techniques from around the south to create a taste without borders. The perfect example is the Voo Doo Tuna®, one of our dishes from 15 years ago. Yet, it's still popular today because we take conventional ingredients like peppercorn, red wine, shallots and mustard and mix them to create an innovative sauce. We sear a great sashimi grade piece of tuna in a well seasoned cast iron skillet to a perfect medium rare. Just like our food, we take our beverages to the next level. QUESTIONS FOR OUR CHEFS
I moved from France to Austin three years ago.As typical French people, I do love bread and can't imagine a meal without it! But, I have discovered in Texas something even better...cornbread I tried to bake it myself a few times, but it was unsuccessful
Yours is my favorite! I was wondering which secret ingredients and tips you use to make your cornbread so soft, flavorful and what gives it its perfect golden color? I am sure the honey butter which comes with it helps a lot...but it can't be the only trick..:-)
I heard about your chile contest fest...and I was wondering if you tried to bake some "chile cornbread".
I also do love your mojito's, one of the best in town I think, did you try a "chile mojito ?"

Thanks for being a fan and welcome to TEXAS! Cornbread is typically a very course bread that has great flavor, but usually dry. We make mine lighter, moist and flavorful. The key ingredient is plain yogurt and sweet corn and it has to come fresh right out of the oven. You can find the recipe in the recipe section. The good thing about cornbread is you can add just about anything to it; green chiles, sausage, cheese, etc..
